It’s birthday time at our house, which means time for a special breakfast. My son loves chocolate and loves waffles, so it was obviously time to search the web for chocolate waffles! I made some edits to one I found online, and now we have a breakfast my kid says will be his special birthday breakfast every year! Here’s to traditions!
1 1/2 cup flour
2 t. baking powder
1/2 t. baking soda
1/2 t. salt
1/2 cup white sugar
5 T. cocoa powder
1 t. cinnamon
1 cup milk
4 T. butter, melted
1 t. vanilla
Chocolate chips (about a half bag or whatever looks good)
Toppings to taste – maple syrup, powdered sugar, whipped cream, strawberries
Preheat waffle iron. Mix flour, baking powder, baking soda, salt, sugar, cocoa powder and cinnamon in large mixing bowl.
Whisk eggs in measuring cup, then add milk and melted butter (which I melt first in the micro).
Mix wet and dry ingredients together. Spray waffle iron and pour on the mix, cooking till golden brown. Serve with your favorite toppings and maybe even a birthday candle!
Note: I think the dry mix in a cellophane bag and ribbon would be a cute gift, along with the wet ingredients to add. You could add some maple syrup and/ora waffle iron if you want to get fancy!
PS We have and love this griddle/waffle iron/panini maker, and it’s on sale over half off at Williams Sonoma! Happy Valentine’s Day to you!
