Simple Chicken Noodle Soup

This chicken noodle soup in the Instant Pot is so good and sure to cure what ails you. It comes together so quickly in the Instant Pot. This is the kind of recipe where you measure with your heart – my favorite! 

1 cup diced onion
1 cup diced celery
1 cup diced carrots
1 T. olive oil or butter
2-3 chicken breasts
1 large box bone broth (for extra protein!)
2-4 more cups water
1-2 t. Chicken Better than Bullion
2-3 cups egg noodles
Splash or two half-and-half or cream

Turn on Instant Pot to saute function and saute onion, celery, and carrots for 5 minutes. (Make your life easier with a chopper!) Add chicken breasts, bone broth, water, and Better than Bullion. Pressure cook for 7 minutes, then let sit for a few minutes before releasing the pressure. Remove chicken breasts and chop/shred while you add egg noodles and saute until done. Add chicken back in, add a little half-and-half or cream, and serve. You can add herbs (bay leaves, thyme, etc.) to kick it up, but this is so homey I’d make it just like it is. Enjoy and feel better soon!
