This is a one pan wonder dish. Enjoy the ease and every bite of goodness.
1 Rotisserie Chicken (deboned) or two chicken breasts cooked and seasoned in a crockpot.
1 Boursin cheese (green box-garlic and herb)
1 c. Uncooked Orzo pasta
1 3/4 cup of chicken broth
8-10 oz of fresh chopped spinach
1 container of cherry tomatoes (halved) or can of petite diced tomatoes
Preheat oven to 350. Place the Boursin cheese in the center of a greased 9×13 casserole dish. Next, add the Orzo evenly, the pieces of the chicken, then the chicken broth. Generously add the spinach over the top and finish off with the tomatoes. Cook for 30 minutes covered and an additional 5 to 10 minutes uncovered.
Serve with green beans, asparagus, or salad.
